I replaced the conti ultra sports 700x23 with ultra gatorskins 700x25 on my bike. The ultra sports may be great racing tires but they have the puncture resistance of wet kleenex. The first 50 miles on the gatorskins felt great! I did not notice a significant difference in rolling resistance and on my usual loop I averaged 18.42 mph which is right were I ride consistently - around 18.5 on this loop. They felt firm and very sure. I liked not having to worry about flatting out every 30 minutes (ok - that is an exaggeration but on the ultras I had 5 flats in about 500 miles). I have gatorskins on my commuter and have about 2000 miles without a flat. All around these are great tires! For what you may be giving up over a true `racing' tire - that is not going to matter unless you are in the Tour.
